  • 2 tbsp olive oil (extra virgin recommended)
  • 1 tsp salt (kosher or sea salt)
  • ½ tsp freshly cracked black pepper
  • Optional: ½ tsp red pepper flakes
  • Optional: fresh chopped parsley for garnish

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Pat the chicken thighs dry with paper towels and season both sides generously with salt and pepper.
  3. Heat 2 tbsp olive oil in a large oven-safe skillet over medium-high heat until shimmering but not smoking (about 2 minutes).
  4. Place the chicken thighs skin-side down in the pan, pressing lightly to ensure even contact. Cook without moving for 6-8 minutes until the skin is deep golden brown and crisp.
  5. Flip the chicken and cook the other side for about 3 minutes.
  6. While the chicken cooks, whisk together honey, soy sauce, minced garlic, and apple cider vinegar in a small bowl.
  7. Pour the glaze evenly over the chicken thighs in the skillet.
  8. Transfer the skillet to the preheated oven and roast for 15-18 minutes, basting once halfway through with the pan juices.
  9. Check the internal temperature with an instant-read thermometer; it should read at least 165°F (74°C).
  10. Remove the skillet from the oven and let the chicken rest for 5 minutes before serving.
  11. Garnish with freshly chopped parsley and a sprinkle of red pepper flakes if desired.
