Ingredients

Scale
  • 6 bone-in, skin-on chicken thighs (about 3 lbs / 1.4 kg)
  • 4 large cloves garlic, minced or finely chopped
  • 3 tbsp honey
  • 2 tbsp soy sauce (low-sodium preferred)
  • 1 tbsp apple cider vinegar
  • 2 tbsp olive oil (extra virgin recommended)
  • 1 tsp salt (kosher or sea salt)
  • ยฝ tsp freshly cracked black pepper
  • Optional: ยฝ tsp red pepper flakes
  • Optional: fresh chopped parsley for garnish

Instructions

  1. Preheat your oven to 425ยฐF (220ยฐC).
  2. Pat the chicken thighs dry with paper towels and season both sides generously with salt and pepper.
  3. Heat 2 tbsp olive oil in a large oven-safe skillet over medium-high heat until shimmering but not smoking (about 2 minutes).
  4. Place the chicken thighs skin-side down in the pan, pressing lightly to ensure even contact. Cook without moving for 6-8 minutes until the skin is deep golden brown and crisp.
  5. Flip the chicken and cook the other side for about 3 minutes.
  6. While the chicken cooks, whisk together honey, soy sauce, minced garlic, and apple cider vinegar in a small bowl.
  7. Pour the glaze evenly over the chicken thighs in the skillet.
  8. Transfer the skillet to the preheated oven and roast for 15-18 minutes, basting once halfway through with the pan juices.
  9. Check the internal temperature with an instant-read thermometer; it should read at least 165ยฐF (74ยฐC).
  10. Remove the skillet from the oven and let the chicken rest for 5 minutes before serving.
  11. Garnish with freshly chopped parsley and a sprinkle of red pepper flakes if desired.

Notes

Pat chicken dry thoroughly for extra crispy skin. Use bone-in, skin-on thighs for best flavor and juiciness. Avoid overcrowding the pan to maintain crispiness. If garlic browns too quickly, reduce oven temperature or baste more often. For gluten-free, substitute soy sauce with tamari or coconut aminos. Leftovers reheat best in a skillet or oven to preserve crispiness.
