  • 4 bone-in, skin-on chicken thighs (about 1.5 pounds / 700 grams)
  • 3 cloves fresh garlic, minced
  • ½ cup finely grated parmesan cheese (Parmigiano-Reggiano recommended)
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt (adjust to taste)
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon dried Italian herbs or oregano (optional)
  • Zest of 1 lemon (optional)

Instructions

  1. Pat the chicken thighs dry thoroughly with paper towels to remove moisture.
  2. In a mixing bowl, combine garlic powder, smoked paprika, salt, pepper, and dried herbs; stir well to blend evenly.
  3. Drizzle olive oil over the chicken thighs and rub it in thoroughly. Sprinkle the seasoning blend over the thighs, rubbing it into the skin and under the skin where possible.
  4. Add the minced garlic and grated parmesan to the bowl. Gently press the mixture onto the skin of each chicken thigh to form a crust without rubbing it off.
  5. Preheat the air fryer to 400°F (200°C). Place the chicken thighs skin-side down in a single layer without overcrowding.
  6. Cook for 10-12 minutes, then flip carefully with tongs and cook for another 10-13 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is golden brown and crispy.
  7. Let the chicken rest for 5 minutes before serving. Sprinkle lemon zest over the top for a fresh finish.

Notes

If parmesan browns too quickly, reduce air fryer temperature to 375°F and increase cooking time slightly. Press parmesan and garlic firmly onto the skin to prevent burning. Avoid overcrowding the air fryer basket for even cooking. Let chicken rest before serving to keep it juicy. For dairy-free version, substitute parmesan with nutritional yeast or vegan cheese. Boneless thighs can be used but cook faster; start checking at 15 minutes.
