  • 810 garlic scapes, chopped (or mild green onions as substitute)
  • 4 ounces goat cheese, softened (Chevre recommended)
  • 2 tablespoons fresh herbs, chopped (parsley, chives, tarragon mix)
  • 1/4 cup milk or cream (whole milk, half-and-half, or almond milk)
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper, to taste
  • 1 teaspoon lemon zest (optional)

Instructions

  1. Rinse and pat dry garlic scapes. Cut about 6 scapes into 1-inch pieces for frying, finely chop remaining 2-4 for mixing into eggs.
  2. Heat 1 tablespoon olive oil in skillet over medium heat. Add 1-inch garlic scape pieces and sauté until golden and slightly crispy, about 3-4 minutes. Stir often to prevent burning. Remove with slotted spoon and set aside.
  3. In a mixing bowl, whisk 6 large eggs until smooth. Add milk or cream, salt, and pepper. Stir in finely chopped garlic scapes and fresh herbs. Gently fold in softened goat cheese, keeping some creamy bits intact.
  4. Wipe skillet if needed and heat remaining 1 tablespoon olive oil over medium-low heat. Pour in egg mixture and cook gently for 5-7 minutes until edges set and pull away slightly, center remains soft.
  5. Sprinkle reserved fried garlic scapes evenly over the frittata surface. Optionally add lemon zest.
  6. Transfer skillet to preheated broiler and cook 2-4 minutes until top sets and turns golden. Watch closely to avoid burning.
  7. Remove from oven and let rest 3-5 minutes before slicing. Serve warm or at room temperature.

Notes

Use room temperature eggs for fluffiness. Soften goat cheese before mixing. Fry garlic scapes separately for crispy topping. Use cast iron skillet for best crust. Watch broiler closely to avoid burning. If no oven-safe skillet, finish cooking on stovetop covered on low heat for 10 minutes.
