This recipe turns humble Brussels sprouts into a crave-worthy side dish with crispy bacon, sticky maple syrup, and a tangy balsamic glaze. It’s quick, easy, and perfect for weeknights or holiday entertaining.

  • 1.5 lbs (680 g) Brussels sprouts, trimmed and halved
  • 6 slices (about 170 g) thick-cut bacon, chopped
  • 3 tablespoons (45 ml) pure maple syrup
  • 2 tablespoons (30 ml) balsamic vinegar
  • 1 tablespoon (15 ml) olive oil
  • Salt and black pepper to taste
  • ¼ teaspoon red pepper flakes (optional)

Instructions

  1. Prep the sprouts: Rinse Brussels sprouts under cold water and pat completely dry with paper towels. Trim tough ends and remove any yellow or wilted outer leaves. Cut each sprout in half lengthwise through the stem. If very large, cut into quarters.
  2. Cook the bacon: Place a large cast-iron skillet over medium heat. Add chopped bacon and cook, stirring occasionally, until crispy (about 8 minutes). Use a slotted spoon to transfer bacon to a paper towel-lined plate, leaving rendered fat in the pan.
  3. Sear the sprouts: Increase heat to medium-high. Add olive oil to the hot bacon fat. Carefully place Brussels sprouts cut-side down in a single layer (work in batches if needed). Cook undisturbed for 4-5 minutes until deeply golden brown. Toss and continue cooking for 5-7 minutes, stirring occasionally, until tender and charred.
  4. Make the glaze: While sprouts cook, whisk together maple syrup and balsamic vinegar in a small bowl. Set aside.
  5. Glaze and finish: Once sprouts are tender and well-browned, reduce heat to low. Drizzle maple-balsamic mixture over sprouts and add crispy bacon back to the pan. Toss together and cook for 1-2 minutes until glaze thickens and coats the sprouts.
  6. Season and serve: Remove from heat. Season with salt, pepper, and red pepper flakes if using. Serve immediately while hot and crispy.

Notes

Dry sprouts thoroughly to ensure crispiness. Don’t move them too soon when searing. Add glaze at the end to prevent burning. Work in batches if needed to avoid overcrowding. For a vegetarian version, skip bacon and use 2 tablespoons of coconut or avocado oil.
