  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 1 teaspoon fresh herbs (mint or parsley), finely chopped (optional)

Instructions

  1. Grate the zucchinis using a box grater or food processor. Place the grated zucchini in a clean kitchen towel or cheesecloth and squeeze firmly to remove as much moisture as possible (about 5 minutes).
  2. In a large bowl, combine the squeezed zucchini, grated Parmesan, flour, beaten egg, minced garlic, and chopped fresh herbs. Season with salt and pepper. Stir until well incorporated and the batter holds shape when scooped (about 5 minutes).
  3. Heat about 1/4 inch of olive or vegetable oil in a skillet over medium heat until shimmering but not smoking (about 3 minutes).
  4. Scoop tablespoon-sized portions of batter, flatten gently into patties, and place carefully in the hot oil. Fry in batches without overcrowding the pan.
  5. Cook each side for 3-4 minutes until deep golden brown and crispy. Flip gently with a spatula to avoid breaking. Adjust heat as needed to prevent burning (total frying time about 7-8 minutes per batch).
  6. Transfer cooked fritters to a plate lined with paper towels to drain excess oil (about 1 minute).
  7. While frying, whisk together Greek yogurt, minced garlic, lemon juice, olive oil, salt, pepper, and optional herbs in a small bowl. Chill until serving (about 5 minutes).
