Instructions

  1. Prepare the Filling (10 minutes): In a medium bowl, combine shredded mozzarella, ricotta, finely chopped spinach, carrot, bell pepper, and mushrooms if using. Add Italian seasoning, garlic powder, salt, and pepper. Mix thoroughly until well combined. Fold in cooked sausage or pepperoni if using. Ensure filling is moist but not runny.
  2. Roll Out the Dough (5 minutes): Lightly flour your workspace and roll the refrigerated pizza dough into a roughly 12×10-inch rectangle with about 1/8 inch thickness. Let rest if dough is too springy.
  3. Cut the Dough Into Squares (5 minutes): Using a sharp knife or pizza cutter, slice the dough into 3×3-inch squares, yielding about 12 squares.
  4. Fill and Seal the Rolls (10 minutes): Place about 1 tablespoon of filling in the center of each square. Brush edges with beaten egg to seal. Fold dough over to form a triangle or rectangle and press edges firmly. Pinch edges with a fork for extra seal.
