Crispy Prosciutto Wrapped Melon with Burrata and Honey

A quick and impressive appetizer featuring crispy prosciutto wrapped around sweet melon wedges, topped with creamy burrata and drizzled with honey for a perfect balance of salty, sweet, creamy, and crunchy flavors.

  • 1 ripe but firm cantaloupe or honeydew melon, cut into bite-sized wedges or cubes
  • 68 slices thinly sliced prosciutto
  • 8 ounces fresh burrata cheese, room temperature
  • Honey, for drizzling (preferably raw or wildflower honey)
  • A handful of fresh basil leaves, torn or whole for garnish
  • Extra virgin olive oil, optional, for a light drizzle
  • Freshly ground black pepper, to taste
  • Sea salt, a pinch, if needed

Instructions

  1. Cut the melon in half, remove the seeds, and slice into bite-sized wedges about 1 to 1.5 inches thick. Keep the rind on for easier handling.
  2. Let the burrata sit at room temperature for about 10 minutes, then slice into small portions.
  3. Heat a non-stick skillet over medium heat. Lay each slice of prosciutto flat in the pan without overlapping. Cook for 2-3 minutes per side until crispy and slightly browned, turning carefully with tongs. Remove and drain on paper towels.
  4. Once the prosciutto has cooled slightly but is still pliable, wrap a slice around each melon wedge.
  5. Arrange the wrapped melon wedges on a serving platter. Add dollops or slices of burrata between the wedges.
  6. Drizzle honey generously over the platter. Sprinkle torn fresh basil leaves and grind black pepper over the top. Optionally, add a light drizzle of extra virgin olive oil.
  7. Taste a piece and add a pinch of sea salt if needed.

Notes

Cook prosciutto on medium heat to avoid burning and achieve a delicate crunch. Wrap melon while prosciutto is still warm for better adhesion. Assemble just before serving to maintain crispness. For dairy-free options, substitute burrata with vegan cheese and honey with maple syrup. Leftovers should be stored separately to keep prosciutto crisp.
