  • 1 cup (240 ml) white vinegar (distilled or white vinegar)
  • 1 cup (240 ml) water (filtered or tap)
  • 1 tablespoon kosher salt
  • 1 teaspoon granulated sugar
  • 1 teaspoon black peppercorns
  • Optional: 1 bay leaf

Instructions

  1. Wash and dry the cucumbers thoroughly. Slice into spears or coins, ensuring uniform size for even pickling. (5 minutes)
  2. In a mixing bowl, combine 1 cup white vinegar, 1 cup water, 1 tablespoon kosher salt, and 1 teaspoon sugar. Stir until salt and sugar dissolve. (3 minutes)
  3. Place 2 to 3 dill sprigs, 2 smashed garlic cloves, 1/2 teaspoon red pepper flakes, and 1/2 teaspoon black peppercorns at the bottom of each jar. Pack cucumber slices snugly without crushing. Tuck remaining garlic and dill sprigs on top. (8 minutes)
  4. Pour the brine into each jar until cucumbers are fully submerged, leaving about 1/2 inch headspace. Add a bay leaf if desired. (2 minutes)
  5. Seal jars tightly and refrigerate. Let sit for at least 24 hours before tasting; flavors deepen over time. (At least 24 hours, ideally 48 hours)
  6. After 24 hours, taste a pickle. If not spicy or tangy enough, refrigerate longer. Pickles stay fresh up to 3 weeks refrigerated. (1 minute)

Use Kirby or Persian cucumbers for best crunch. Use kosher salt, not table salt, for proper brine balance. Adjust red pepper flakes to taste; heat intensifies over time.
