Delicious Salted Caramel Banana Bread with Chocolate Chunks

  • 1/2 cup (115g) unsalted butter, melted
  • 1 cup (200g) granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon pure vanilla extract
  • 1 1/2 cups (190g) all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup (120g) salted caramel spread
  • 3/4 cup (130g) semi-sweet chocolate chunks

Instructions

  1. Preheat the oven to 350ยฐF (175ยฐC). Grease a 9×5-inch loaf pan or line it with parchment paper.
  2. Mash the bananas in a large bowl until mostly smooth with a few small lumps.
  3. Add melted butter to the mashed bananas and stir to combine. Whisk in granulated sugar, eggs one at a time, and vanilla extract until smooth and glossy.
  4. In a separate bowl, sift together the all-purpose flour, baking soda, and salt.
  5. Gently fold the dry ingredients into the wet mixture using a spatula until just combined.
  6. Dollop the salted caramel spread on top of the batter and fold lightly to create a marbled effect.
  7. Fold in the chocolate chunks gently to distribute evenly.
  8. Pour the batter into the prepared loaf pan and smooth the top. Optionally, sprinkle extra chocolate chunks on top.
  9. Bake for 55-65 minutes, or until a toothpick inserted in the center comes out mostly clean with a few moist crumbs. Start checking at 50 minutes.
  10. Cool the bread in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Use very ripe bananas for best sweetness. Swirl caramel spread lightly to create pockets of flavor. Avoid overmixing to keep bread tender. Adjust baking time if using glass pan or at high altitude. For gluten-free, substitute all-purpose flour with almond flour or gluten-free blend. For dairy-free, use coconut oil instead of butter and dairy-free caramel spread.
