Easy 5-Minute Mixed Berry Frozen Yogurt Bark

This creamy frozen yogurt bark with mixed berries is a quick and easy treat that changes minds about frozen yogurt. With just five minutes of prep and simple ingredients, it’s a healthy, crowd-pleasing dessert perfect for hot days.

Ingredients

  • 2 cups (480g) plain Greek yogurt (full-fat or 2%)
  • 34 tablespoons (45-60ml) honey or maple syrup
  • 1 teaspoon vanilla extract (pure)
  • A tiny pinch of sea salt
  • 1 cup (150g) mixed berries (fresh or frozen; blueberries, raspberries, sliced strawberries)
  • Optional: 2 tablespoons mini chocolate chips or chopped nuts

Instructions

  1. Line your baking sheet with parchment paper, letting the edges hang over slightly. Press the paper into the corners so it lies flat.
  2. Take your yogurt out of the fridge about 15 minutes before you start to let it come to room temperature.
  3. In a mixing bowl, combine the Greek yogurt, honey or maple syrup, vanilla extract, and a tiny pinch of salt. Whisk together until smooth and fully combined. Taste and adjust sweetness if needed.
  4. Pour the yogurt mixture onto the center of your prepared baking sheet. Use a spatula to spread it into an even rectangle, about 1/4-inch thick.
  5. Scatter your mixed berries evenly over the yogurt. Press them down gently with your fingertips so they’re partially embedded in the yogurt.
  6. Add any optional toppings like chocolate chips or nuts now. Sprinkle them evenly over the berries and press them in gently.
  7. Place the baking sheet flat on a freezer shelf. Freeze for at least 3-4 hours, or until completely solid. For best results, freeze overnight.
  8. Once frozen solid, lift the parchment paper to remove the bark from the baking sheet. Place it on a cutting board and break it into irregular pieces with your hands, or cut into clean squares with a sharp knife.
  9. Transfer the pieces to an airtight container or freezer bag, separating layers with parchment paper so they don’t stick together. Store in the freezer until ready to serve.

Notes

Let yogurt come to room temperature for smoother spreading. Don’t overmix the yogurt to avoid icy crystals. If using frozen berries, work quickly to prevent color bleeding. Use parchment paper to avoid sticking. For best texture, freeze overnight. Store in freezer for up to two weeks.
