  • 1 teaspoon pure vanilla extract
  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking dish lightly with butter or non-stick spray.
  2. Heat 2 tablespoons of unsalted butter in a medium skillet over medium heat. Add sliced peaches, 3 tablespoons brown sugar, 1 teaspoon cinnamon, and a pinch of salt. Cook, stirring gently, for 5-7 minutes until peaches are softened and caramelized. Stir in 1 teaspoon vanilla extract. Remove from heat and set aside.
  3. Cut the loaf of brioche or challah into 1-inch cubes. Spread half of the bread cubes evenly in the greased baking dish. Spoon half of the caramelized peaches over the bread layer. Repeat with remaining bread and peaches to create two layers.
  4. In a large bowl, whisk together 6 eggs, 2 cups whole milk, 1/2 cup heavy cream (if using), 1/3 cup granulated sugar, 1 teaspoon cinnamon, 1 teaspoon vanilla extract, and a pinch of salt until smooth and slightly frothy.
  5. Pour the custard evenly over the layered bread and peaches. Gently press down on the bread cubes to help them soak up the custard. Let sit for 10-15 minutes at room temperature.
  6. Bake in the preheated oven for 45-50 minutes or until the top is golden brown and custard is set. Tent with foil if the top browns too quickly.
  7. Remove from oven and let cool for 10 minutes. Dust with powdered sugar, drizzle with maple syrup, and garnish with fresh mint if desired before serving.

Notes

Use day-old bread for best texture. If using fresh bread, toast cubes lightly before soaking. Keep heat medium-low when caramelizing peaches to avoid burning.
