Easy Cinnamon Roll French Toast Casserole Recipe Overnight for Perfect Breakfast

A cozy and indulgent breakfast casserole combining cinnamon rolls and custardy french toast soaked overnight for a soft, flavorful treat. Perfect for busy mornings and weekend brunches.

  • 1 package (about 8 rolls) store-bought cinnamon rolls, unbaked
  • 6 large eggs, room temperature
  • 2 cups (480 ml) whole milk or half-and-half
  • 2 teaspoons pure vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg (optional)
  • 2 tablespoons granulated sugar or brown sugar
  • 2 tablespoons unsalted butter, melted
  • Powdered sugar and icing for drizzling after baking

Instructions

  1. Remove the cinnamon rolls from the package but do not bake them. Cut each roll into quarters.
  2. Spread the cinnamon roll pieces evenly in a 9×13-inch casserole dish, leaving some space between pieces.
  3. In a large bowl, whisk together eggs, milk, vanilla extract, cinnamon, nutmeg, and sugar until smooth.
  4. Pour the custard mixture evenly over the cinnamon roll pieces. Gently press down to help the rolls soak up the custard.
  5. Cover the dish tightly with plastic wrap or foil and refrigerate for at least 6 hours or overnight.
  6. Preheat oven to 350°F (175°C). Remove casserole from fridge and let sit at room temperature for 15 minutes.
  7. Brush melted butter evenly over the top of the casserole.
  8. Bake uncovered for 35-45 minutes until custard is set and top is golden brown. A toothpick inserted should come out clean or with a few moist crumbs.
  9. Let cool for 5 minutes, then drizzle cinnamon roll icing over the top. Serve warm.

Notes

Do not skip the overnight soak for best custardy texture. Use room temperature eggs for smooth custard. If edges brown too fast, tent with foil halfway through baking. Can substitute dairy-free milk and butter for dairy-free version. Use gluten-free cinnamon rolls for gluten-free option.
