  • Water and a pinch of salt for boiling
  • 3 tablespoons honey (raw honey preferred)
  • 2 tablespoons soy sauce (low-sodium optional)
  • 1 tablespoon toasted sesame oil
  • 3 cloves garlic, finely minced or grated
  • 1 tablespoon rice vinegar
  • 1 teaspoon grated fresh ginger (optional)
  • 2 green onions, thinly sliced
  • 1 tablespoon toasted sesame seeds
  • Optional: shredded carrots or thin cucumber slices
  • Optional: red pepper flakes for heat

Instructions

  1. Bring a large pot of salted water to a boil. Add 8 ounces (225 grams) of spaghetti or thin Asian egg noodles. Cook according to package instructions, usually 7-9 minutes until just tender but not mushy. Stir occasionally to prevent sticking. Drain and rinse under cold water to stop cooking and cool the noodles. Set aside in the strainer to drain fully (about 5 minutes).
  2. While noodles cook, combine 3 tablespoons honey, 2 tablespoons soy sauce, 1 tablespoon toasted sesame oil, 3 cloves minced garlic, 1 tablespoon rice vinegar, and 1 teaspoon grated ginger in a mixing bowl. Whisk thoroughly until honey dissolves and the mixture is smooth. Taste and adjustโ€”if itโ€™s too sweet, add a splash more soy sauce; too salty, a bit more honey or vinegar can balance.
  3. Add the drained noodles to the bowl with the sauce while theyโ€™re still slightly warm. Toss gently but thoroughly with tongs or two forks to coat every strand with the honey garlic sesame sauce.
  4. Mix in the sliced green onions and toasted sesame seeds. If using shredded carrots or cucumber slices, fold those in now for a fresh crunch. Give everything one last gentle toss.
  5. Transfer the salad to a serving dish and chill in the fridge for at least 15 minutes before serving, or enjoy immediately.

Notes

Toss noodles with sauce while still warm to absorb flavors better. Rinse noodles under cold water to prevent stickiness. Toast sesame seeds in a dry skillet for enhanced nuttiness. Adjust sweetness and salt to taste. Store sauce separately if making ahead to keep noodles fresh.
