Easy Cranberry Brie Bites with Puff Pastry

Flaky puff pastry filled with creamy brie and tart cranberry sauce, topped with fresh rosemary. These easy, elegant bites come together in about 30 minutes and are perfect for holiday entertaining or a cozy snack.

  • 1 sheet puff pastry, thawed
  • 4 ounces brie cheese, cold
  • 1/3 cup cranberry sauce (homemade or canned)
  • 1 large egg, beaten
  • 810 small fresh rosemary sprigs
  • Flaky sea salt, for sprinkling
  • For homemade cranberry sauce: 1 cup fresh or frozen cranberries
  • 1/4 cup orange juice
  • 1/4 cup maple syrup or honey
  • 1 teaspoon orange zest
  • 1/4 teaspoon cinnamon (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone mat.
  2. Prepare your puff pastry. If using frozen, thaw in the refrigerator overnight or on the counter for about 30 minutes. On a lightly floured surface, gently unfold the pastry sheet. Cut it into 9 equal squares (about 3 inches each). If the pastry starts getting soft, pop the squares in the fridge for 5 minutes.
  3. Cut the brie. Keep brie cold. Cut the wheel into 9 equal pieces, about 1/2 inch thick each. Leave the rind on.
  4. Assemble the bites. Place the pastry squares on your prepared baking sheet, spacing them about 2 inches apart. Press gently in the center of each square with your thumb to create a slight indentation. Place one piece of brie in the center of each square. Top with about 1 teaspoon of cranberry sauce.
  5. Fold and seal. Gently bring the four corners of each pastry square up to meet in the center over the filling. Pinch the edges together lightly, leaving a small opening at the top for steam to escape.
  6. Apply the egg wash. In a small bowl, beat the egg with 1 teaspoon of water until smooth. Brush the tops and sides of each pastry bundle. For extra shine, brush a second coat after the first one dries slightly (about 2 minutes).
  7. Bake. Place the baking sheet in the preheated oven and bake for 15-18 minutes, or until the pastry is puffed and deep golden brown. Rotate the pan halfway through if needed.
  8. Add the finishing touches. Remove from the oven and let cool on the baking sheet for 2-3 minutes. Sprinkle with flaky sea salt and top each bite with a small sprig of fresh rosemary.
  9. Serve warm. Transfer to a serving platter and serve immediately.

Notes

Keep puff pastry and brie cold for best results. Do not overfill. Use parchment paper for easy cleanup. For make-ahead, assemble bites up to step 5, refrigerate for up to 4 hours, then brush with egg wash and bake. Freeze unbaked bites (without egg wash) for up to a month.
