  • ½ teaspoon pumpkin pie spice
  • ¼ teaspoon vanilla extract
  • Pinch of sea salt
  • ½ cup (120 ml) oat milk (barista-style recommended)
  • Ice cubes (large cubes preferred)
  • Optional: whipped cream (dairy-free), extra pumpkin pie spice or cinnamon, oat milk foam

Instructions

  1. Brew your chai tea concentrate: Bring 1 cup (240 ml) of water to a boil. Pour over 2 chai tea bags in a heatproof measuring cup or mug. Let steep for exactly 5 minutes. Remove tea bags and let cool to room temperature (or refrigerate for 10 minutes).
  2. Prepare the pumpkin spice mixture: In a mason jar or cocktail shaker, combine 2 tablespoons (30 g) pumpkin puree, 1 tablespoon (15 ml) maple syrup, ½ teaspoon pumpkin pie spice, ¼ teaspoon vanilla extract, and a pinch of sea salt. Screw lid on tightly.
  3. Shake the jar vigorously for about 20 seconds until the pumpkin puree is fully emulsified and smooth, with no lumps.
  4. Add ½ cup (120 ml) oat milk to the jar. Screw lid back on and shake for another 10 seconds until combined.
  5. Fill a tall serving glass with ice cubes (large cubes preferred).
  6. Pour the cooled chai tea over the ice.
  7. Gently pour the creamy pumpkin-oat milk mixture over the chai to create layers.
  8. Stir gently with a long spoon or straw before drinking. Taste and adjust sweetness if needed.
  9. Add optional toppings: whipped cream, a dusting of pumpkin pie spice or cinnamon, or oat milk foam. Serve immediately.

Notes

For the smoothest texture, let pumpkin puree sit at room temperature for 15 minutes before using. Chill chai concentrate completely to prevent ice from melting too quickly. Barista-style oat milk (e.g., Oatly Barista Edition or Califia Farms Barista Blend) yields the creamiest results. Do not skip the pinch of salt—it balances sweetness and enhances flavors.
