  • 8 ounces brie cheese
  • 6 ounces sharp cheddar cheese
  • 4 ounces prosciutto
  • 4 ounces salami (Genoa)
  • 1 large apple (Honeycrisp or Fuji)
  • 1/2 cup dried cranberries
  • 1/2 cup dried figs
  • 1/4 cup honey
  • 1 cup assorted crackers
  • 1/4 cup dark chocolate (70% cocoa)
  • Fresh rosemary sprigs for garnish

Instructions

  1. Make the candied pecans: Place a small non-stick skillet over medium heat. Melt 2 tablespoons butter. Add 1 cup pecan halves, 2 tablespoons brown sugar, 1/2 teaspoon cinnamon, and 1/4 teaspoon cayenne (if using). Stir constantly for 5-7 minutes until sugar caramelizes and pecans are glossy. Spread on parchment paper, sprinkle with sea salt, and let cool completely (about 15 minutes).
  2. Prep the cheeses: Remove brie from fridge 30 minutes before serving. Place whole brie on board. Cut sharp cheddar into thin slices or small cubes.
  3. Slice the apple: Core the apple and cut into thin wedges just before assembling.
  4. Arrange the meats: Fold prosciutto into loose ribbons or roses. Fold salami slices in half twice and fan out on board.
  5. Build the board: Place brie in center or slightly off-center. Add small bowls of honey and dried cranberries. Arrange cheddar, prosciutto, and salami around them. Fill gaps with apple slices, dried figs, dark chocolate pieces, and cooled candied pecans. Scatter crackers in clusters.
  6. Garnish and serve: Tuck fresh rosemary sprigs around board. Drizzle honey over brie or apple slices. Serve immediately at room temperature.

Notes

Let cheeses come to room temperature for best flavor. Cool candied pecans completely before adding to board to prevent softening crackers. For make-ahead, keep candied pecans and apple slices separate until serving. Store leftovers: candied pecans in airtight container at room temperature up to 1 week; cheese and meats wrapped separately in fridge for 3-4 days.
