A simple and effective method to flash freeze fresh blueberries to preserve their freshness, texture, and flavor for year-round use.

Ingredients

Scale
  • 2 to 4 cups (300600 grams) fresh blueberries, preferably ripe but firm
  • Optional: pinch of lemon zest or sprinkle of sugar (for dessert use)

Instructions

  1. Rinse the blueberries gently under cold running water, handling carefully to avoid bruising (about 2 minutes).
  2. Dry the blueberries completely using a salad spinner or pat dry with a clean kitchen towel (about 5 minutes).
  3. Line a rimmed baking sheet with parchment paper or a silicone baking mat (about 1 minute).
  4. Spread the dry blueberries evenly in a single layer on the tray, ensuring none are touching (about 3 minutes).
  5. Place the baking sheet flat in the freezer and freeze for at least 2 hours or until berries are completely firm.
  6. Transfer the frozen blueberries into freezer-safe bags or airtight containers, removing as much air as possible before sealing (about 5 minutes).
  7. Label the bags with the date and store in the freezer until ready to use.

Notes

Drying blueberries thoroughly before freezing is crucial to prevent ice crystals and clumping. Spread berries in a single layer to avoid freezing into a solid block. Use quality freezer bags to prevent freezer burn. Label bags with date for best tracking. Avoid thawing and refreezing to maintain texture and flavor.
