  • 1 cup buffalo sauce (e.g., Frank’s RedHot Original)
  • 4 tablespoons unsalted butter
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • 1 bunch celery, cut into 3-inch sticks
  • 1 bunch rainbow carrots, peeled and cut into sticks
  • 1 cup blue cheese crumbles
  • 1 cup ranch or blue cheese dressing
  • 8 ounces crackers (mix of buttery Ritz-style, water crackers, sesame sticks)
  • 8 ounces sharp cheddar cheese, cut into cubes or slices
  • Fresh dill or chives for garnish
  • Pickled jalapeños (optional)
  • Sliced avocado (optional)
  • Cherry tomatoes (optional)
  • Honey-roasted peanuts or spicy pecans (optional)

Instructions

  1. Shred the rotisserie chicken, removing the skin. Place the shredded chicken in a bowl and set aside. Blot with a paper towel if very moist.
  2. In a large skillet, melt 4 tablespoons of butter over medium-low heat. Whisk in 1 cup buffalo sauce, 1 teaspoon Worcestershire sauce, and 1/2 teaspoon garlic powder. Simmer gently for 2 minutes.
  3. Add the shredded chicken to the skillet. Toss to coat evenly. Cook over low heat for 5-7 minutes, stirring occasionally, until warmed through. Add a splash of water or extra sauce if dry. Season with salt and pepper to taste.
  4. While the chicken simmers, wash and cut celery and carrots into 3-inch sticks. Pat dry.
  5. Arrange the board: Place small bowls for dressing and blue cheese crumbles on the board. Spoon the warm buffalo chicken into a pile next to the bowls.
  6. Fill the gaps with celery and carrot sticks, cheese cubes, and crackers in small, grouped piles. Garnish with fresh herbs.
  7. Serve immediately while the chicken is warm and veggies are crisp.

Notes

Prep all components ahead of time except the chicken. Make the chicken last so it goes from skillet to board to table hot. For a keto-friendly version, replace crackers with cucumber rounds, bell pepper strips, and endive leaves. Leftover chicken can be stored in an airtight container in the fridge for up to 3 days and reheats well.
