  • 4 ounces prosciutto, thinly sliced and torn
  • 4 ounces capicola or soppressata, sliced (optional)
  • 8 ounces aged cheddar, sliced into thin triangles or cubes
  • 8 ounces brie, left whole or halved
  • 6 ounces gouda or havarti, sliced
  • 4 ounces goat cheese log, sliced into rounds
  • 12 ounces assorted crackers (34 varieties)
  • 1 small baguette, sliced into thin rounds and lightly toasted
  • 4 ounces breadsticks or grissini
  • 1 cup red grapes, washed and left in small clusters
  • 1/2 cup dried apricots or figs
  • 1 cup cherry tomatoes, halved
  • 1 small cucumber, sliced into rounds
  • 1/2 cup pickles or cornichons
  • 1/4 cup honey
  • 1/4 cup whole grain mustard
  • 1/2 cup mixed olives
  • 1/2 cup roasted and salted almonds or cashews
  • 2 ounces dark chocolate, broken into pieces

Instructions

  1. Start with the bowls. Place small bowls or ramekins on the board first, spacing them evenly. Fill with honey, mustard, olives, and nuts.
  2. Add the cheeses. Place brie whole or halved in a prominent spot. Arrange cheddar triangles in a small cluster. Fan out gouda slices in a line. Place goat cheese rounds near the honey bowl.
  3. Layer the meats. Fold salami slices in half and arrange in a loose pile. Roll pepperoni into tubes and scatter in a separate cluster. Tear prosciutto into rough pieces and drape loosely. Place capicola in its own small pile.
  4. Fill in with crackers and bread. Arrange crackers in groups around the board. Place baguette slices in a neat row or overlapping circle. Tuck breadsticks vertically into empty gaps.
  5. Add fruits and vegetables. Scatter grape clusters in two or three spots. Tuck dried apricots near the cheddar. Place cherry tomato halves and cucumber rounds in small groupings. Put cornichons near the salami.
  6. Finish with the extras. Sprinkle dark chocolate pieces in one or two spots. Add any remaining nuts or olives to fill bare patches. Step back and fill any empty spaces larger than a cracker with extra grapes or crackers.
  7. Serve immediately or cover loosely with plastic wrap and refrigerate for up to 4 hours. Take out 20 minutes before serving to let cheeses come to room temperature.

Notes

Buy pre-sliced meats from the deli counter for consistency. For cheeses, ask for blocks you can slice yourself. If feeding a crowd of 12+, double everything. For gluten-free guests, skip the baguette and add extra rice crackers or veggie sticks. Take cheese out of the fridge 20 minutes before serving for best flavor.
