A quick and delicious lunch idea featuring a warm, flaky croissant filled with salty ham, melted cheese, and a hint of Dijon mustard, served with fresh fruit, veggies, and pickles in a bento box. Perfect for picnics, road trips, or a satisfying desk lunch.

  • 2 large croissants
  • 46 slices deli ham (black forest or honey ham)
  • 24 slices cheese (Gruyère, Swiss, or provolone)
  • 1 tablespoon Dijon mustard
  • Optional: a few leaves butter lettuce or baby spinach
  • 1/2 cup fresh fruit (apple slices, grapes, or berries)
  • 1/4 cup cherry tomatoes (halved or whole)
  • 23 baby carrots or cucumber sticks
  • Small handful pickles or olives (cornichons or kalamata olives)
  • Optional: small handful nuts or hard-boiled egg

Instructions

  1. Preheat oven or air fryer to 350°F (175°C). Slice croissants in half horizontally, leaving a hinge.
  2. Toast croissants cut-side up for 3-4 minutes until lightly golden.
  3. Spread a thin layer of Dijon mustard on the bottom half of each croissant.
  4. Fold ham slices in half and layer on the bottom half of the croissant (2-3 slices per croissant).
  5. Place cheese slices on top of the ham.
  6. Close the croissant and return to oven or air fryer for 2-3 minutes to melt the cheese.
  7. While sandwich warms, wash and slice fruit, halve cherry tomatoes, and slice cucumber. Arrange in bento box compartments.
  8. Let croissant cool 1-2 minutes, then slice diagonally. Place in largest compartment of bento box.
  9. Add fruit, veggies, and pickles/olives in smaller compartments. Add optional extras like hard-boiled egg or nuts.
  10. If packing for later, let everything cool completely before closing lid. Store in refrigerator up to 24 hours.

Notes

For best results, let cheese come to room temperature before assembling. To prevent sogginess, let croissant cool completely before packing. If using day-old croissants, warm in oven at 300°F for 5 minutes to revive. Dijon mustard is key for flavor; honey mustard or fig jam can be substituted.
