  • 4 tablespoons unsalted butter, softened
  • 3 cloves garlic, minced

  • 2 tablespoons fresh parsley, finely chopped
  • 1 tablespoon olive oil
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper, freshly ground
  • ½ teaspoon paprika (optional)
  • 1 tablespoon fresh lemon juice (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pat the chicken breasts dry with paper towels.
  3. Season the chicken with salt, pepper, and paprika on both sides.
  4. In a small bowl, combine softened butter, minced garlic, rosemary, thyme, and parsley. Mash together with a fork until evenly distributed.
  5. Spread the herb butter evenly over the top of each chicken breast.
  6. Drizzle olive oil over the buttered chicken.
  7. Arrange the chicken in a single layer in a 9×13-inch baking dish, ensuring they are not touching.
  8. Bake for 20-25 minutes, until the internal temperature reaches 165°F (74°C) in the thickest part.
  9. Remove from oven, tent loosely with aluminum foil, and let rest for 5-10 minutes.
  10. Optional: Squeeze fresh lemon juice over the chicken before serving.

Notes

For even cooking, pound thick chicken breasts to about 1 inch thickness. Let the chicken rest after baking to keep it juicy. The herb butter can be made up to 3 days ahead.
