Easy Honey Mustard Grilled Chicken Caesar Salad in a Jar

A quick and easy layered salad in a jar featuring smoky grilled chicken, crisp Romaine, crunchy croutons, and a tangy honey mustard Caesar dressing. Perfect for meal prep and busy lunches.

  • 2 boneless, skinless chicken breasts (about 12 oz / 340 g)
  • 1 tablespoon olive oil
  • Salt and freshly ground black pepper, to taste
  • 1 teaspoon smoked paprika
  • 3 tablespoons Dijon mustard
  • 2 tablespoons honey
  • 2 tablespoons mayonnaise (use vegan mayo for dairy-free)
  • 1 tablespoon lemon juice (freshly squeezed)
  • 1 small garlic clove, minced
  • 2 teaspoons Worcestershire sauce
  • Salt and pepper, to taste
  • 4 cups Romaine lettuce, chopped (about 120 g)
  • ½ cup cherry tomatoes, halved
  • ¼ cup Parmesan cheese, shredded (optional)
  • ½ cup croutons (store-bought or homemade)

Instructions

  1. Preheat grill or grill pan over medium-high heat. Rub chicken breasts with olive oil, salt, pepper, and smoked paprika.
  2. Grill chicken for 6-7 minutes per side until internal temperature reaches 165°F (74°C). Let rest for 5 minutes, then slice into ¼ inch strips.
  3. Whisk together Dijon mustard, honey, mayonnaise, lemon juice, minced garlic, Worcestershire sauce, salt, and pepper in a bowl. Add water if needed to thin dressing.
  4. Chop Romaine lettuce, halve cherry tomatoes, shred Parmesan cheese, and prepare croutons.
  5. Spoon 2-3 tablespoons of dressing into the bottom of each jar. Layer grilled chicken strips over dressing, then cherry tomatoes, Romaine lettuce, Parmesan cheese, and top with croutons.
  6. Seal jars and store upright in refrigerator for up to 4 days. Shake well before eating or pour into a bowl.

Notes

Keep dressing at the bottom of the jar to prevent soggy lettuce. Add croutons fresh before eating to maintain crunch. Rest chicken after grilling to keep it juicy. Adjust honey and lemon juice in dressing to balance sweetness and tanginess.
