  • 4 cups (about 450g) frozen shredded hash browns
  • 8 large eggs, room temperature
  • 1 cup (240ml) milk (whole or 2%)
  • 2 cups (200g) shredded cheddar cheese
  • 1 cup (150g) cooked breakfast sausage or bacon, chopped (optional)
  • ยฝ cup (75g) diced onions
  • 1 teaspoon salt
  • ยฝ teaspoon freshly ground black pepper
  • ยผ teaspoon garlic powder
  • 2 tablespoons fresh parsley, chopped (optional)

Instructions

  1. Preheat your oven to 350ยฐF (175ยฐC).
  2. Cook the breakfast sausage or bacon in a non-stick skillet over medium heat until browned and cooked through, about 5โ€“7 minutes. Drain on paper towels. If skipping meat, sautรฉ diced onions in a little olive oil until translucent, about 3 minutes.
  3. In a large bowl, whisk together the 8 eggs and 1 cup of milk until fully combined and slightly frothy, about 1-2 minutes.
  4. Add salt, black pepper, and garlic powder to the egg mixture and stir well.
  5. Fold in the frozen shredded hash browns, cooked meat (or sautรฉed veggies), onions, and 1ยฝ cups of shredded cheddar cheese until evenly distributed.
  6. Lightly grease a 9×13-inch baking dish with butter or cooking spray. Pour the mixture into the dish and spread evenly with a spatula.
  7. Sprinkle the remaining ยฝ cup of shredded cheddar cheese over the top.
  8. Bake uncovered for 45โ€“50 minutes until the top is golden brown and a knife inserted in the center comes out clean. Tent with foil halfway through if edges brown too quickly.
  9. Let rest for 5โ€“10 minutes to set before slicing.
  10. Garnish with chopped fresh parsley before serving, if desired.
