Easy Microwave Mug Lasagna: Perfect Dorm Dinner in 5 Minutes

A quick and easy microwave mug lasagna that comes together in under 5 minutes. Perfect for dorm rooms, late-night cravings, or when you want comfort food without the fuss.

Ingredients

  • 45 lasagna noodles, broken into 1-inch pieces
  • 1/4 cup (60 ml) marinara sauce
  • 2 tablespoons (30 g) ricotta cheese
  • 1/4 cup (30 g) shredded mozzarella cheese
  • 1 tablespoon (5 g) grated Parmesan cheese
  • 1 tablespoon (15 ml) water
  • Optional: 2-3 tablespoons cooked ground beef or Italian sausage
  • Optional: handful of chopped spinach or mushrooms
  • Optional: pinch of red pepper flakes
  • Optional: fresh basil or parsley for garnish

Instructions

  1. Break 4-5 lasagna noodles into small pieces, about 1-inch squares.
  2. Place a single layer of broken noodles in the bottom of a microwave-safe mug (at least 12 oz capacity).
  3. Spoon about 1 tablespoon of marinara sauce over the noodles, then add 1/2 teaspoon of water.
  4. Add a small dollop of ricotta (about 1/2 tablespoon) and sprinkle a little mozzarella and Parmesan on top.
  5. Repeat layers (noodles, sauce, water, cheese) until all ingredients are used, ending with a generous layer of mozzarella and Parmesan on top.
  6. Place the mug on a paper towel or plate. Microwave on high for 2 minutes. If pasta is still firm, microwave in 30-second increments until tender.
  7. Let the mug rest for 1 minute before eating.
  8. Garnish with fresh basil or parsley and red pepper flakes if desired. Serve immediately.

Notes

Use no-boil lasagna noodles for best results. If using regular noodles, break them smaller. Adjust microwave time based on wattage: 700-900 watts works perfectly. Leave at least 1/2 inch space at top of mug to prevent overflow. Let rest 1 minute before eating to allow cheese to set and prevent burns.
