These adorable mummy meatball sub bites are wrapped in pizza dough and string cheese, baked until golden, and topped with candy eyes. They are the perfect quick and easy Halloween appetizer that will disappear at any party.

  • 1 package (16 ounces) frozen fully-cooked meatballs (about 24 meatballs)
  • 1 can (13.8 ounces) refrigerated pizza dough
  • 6 sticks mozzarella string cheese
  • 1/2 cup marinara sauce (plus extra for dipping)
  • 1 large egg (for egg wash)
  • 1 tablespoon melted butter (optional)
  • 1/2 teaspoon garlic powder (optional)
  • 24 candy eyeballs
  • 1 tablespoon cream cheese (optional, to help eyes stick)

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Thaw the meatballs according to package directions (microwave 2-3 minutes or refrigerate overnight).
  3. Unroll pizza dough onto a cutting board. Cut into thin strips about 1/2-inch wide and 4-5 inches long (about 50-60 strips total).
  4. Cut each mozzarella string cheese stick in half lengthwise, then cut each half into quarters to get thin strips.
  5. Place a strip of string cheese on top of a meatball. Wrap a dough strip around the meatball and cheese, leaving a small gap near the top for eyes. Tuck the end underneath. Repeat with remaining meatballs.
  6. Arrange wrapped meatballs on the prepared baking sheet, about 1 inch apart.
  7. Beat the egg in a small bowl. Brush each mummy with the egg wash.
  8. Bake for 12-15 minutes, until dough is golden brown and meatballs are heated through.
  9. Remove from oven and let cool 2-3 minutes. Gently press a candy eyeball onto each mummy (use a dab of cream cheese if needed).
  10. Optional: Melt butter and stir in garlic powder. Brush over warm mummies.
  11. Serve warm with marinara sauce for dipping.

Notes

For best results, use room temperature dough and don’t over-thaw the meatballs. Keep dough strips covered to prevent drying. Don’t wrap too tightly. Let mummies rest before adding eyes to prevent melting. Can be assembled up to 24 hours in advance and refrigerated.
