A quick and easy no-bake dessert featuring a buttery graham cracker crust, creamy cheesecake layer, and fresh berry topping, perfect for summer celebrations.

  • 1 cup fresh blueberries
  • 1 cup fresh raspberries

  • 1 tablespoon fresh lemon juice

Instructions

  1. Prepare the Crust: In a medium bowl, combine 1 ½ cups of graham cracker crumbs, 6 tablespoons melted unsalted butter, and 2 tablespoons sugar. Stir until the mixture resembles wet sand. Press it firmly into the bottom of your 9×9 inch pan, creating an even layer. Chill in the fridge for at least 15 minutes.
  2. Make the Cheesecake Layer: In a large mixing bowl, beat the softened cream cheese with ½ cup powdered sugar and 1 teaspoon vanilla extract until smooth and creamy (about 2-3 minutes). In a separate chilled bowl, whip 1 cup cold heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture.
  3. Assemble the Bars: Spread the cheesecake mixture evenly over the chilled crust, smoothing the top with a spatula. Return the pan to the fridge.
  4. Prepare the Berry Topping: In a bowl, toss together 1 cup sliced strawberries, 1 cup blueberries, 1 cup raspberries, 2 tablespoons sugar, and 1 tablespoon fresh lemon juice. Let sit for 10 minutes to macerate.
  5. Top and Chill: Spoon the berry mixture evenly over the cheesecake layer. Cover with plastic wrap and refrigerate for at least 3 hours or overnight.
  6. Serve: Cut into 12 bars using a sharp knife dipped in hot water and wiped between slices. Serve chilled.
