Instructions

  1. Combine the dry ingredients. In a medium mixing bowl, add 1 cup rolled oats, 1/4 cup ground flaxseed, and 1/8 teaspoon salt (if using). Give them a quick stir with your spatula to distribute everything evenly.
  2. Add the wet ingredients. Spoon in 1/2 cup creamy peanut butter, 1/3 cup honey, and 1/2 teaspoon vanilla extract.
  3. Mix until combined. Start stirring with your spatula, pressing the peanut butter against the sides of the bowl to break it up. The mixture will look dry at first—that’s normal. Keep going. After about a minute, it should start coming together into a thick, cohesive dough. If it’s still crumbly after two minutes, add a teaspoon of honey or water and mix again.

  8. Chill to set. Refrigerate the energy bites for at least 30 minutes before serving. This helps them hold their shape. If you can wait an hour, even better—the flavors meld together and the texture gets perfectly chewy.
  9. Store and enjoy. Transfer the chilled bites to an airtight container and keep them in the fridge. They’ll last up to two weeks.
