  • 1 teaspoon vanilla extract (optional)

Instructions

  1. Wash peaches thoroughly. Blanch in boiling water for 30 seconds, then plunge into ice water to loosen skins.
  2. Peel and chop peaches into roughly 1/2-inch pieces.
  3. Transfer chopped peaches to a mixing bowl and mash with a potato masher or fork to desired consistency.
  4. Stir in sugar and lemon juice until sugar dissolves slightly and mixture is evenly combined.
  5. If using, sprinkle pectin powder over the mixture and whisk until fully combined.
  6. Let the mixture rest at room temperature for about 15 minutes to meld flavors.
  7. Spoon jam into clean glass jars or freezer-safe containers, leaving 1/2 inch headspace for expansion.
  8. Seal containers tightly, label with date, and freeze.

Use firm but ripe peaches for best texture. Blanch peaches to remove skins for smooth jam. Adjust sugar based on peach sweetness. Optional pectin for thicker jam.
