  • 3/4 cup (150g) granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 3 medium ripe bananas, mashed (about 1 1/2 cups or 340g)
  • 1 1/2 cups (180g) all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon fine sea salt
  • 1/2 cup (85g) optional mix-ins: chocolate chips, chopped walnuts, or dried cranberries

Instructions

  1. Preheat your oven to 350°F (175°C). Position the rack in the center of the oven. Line a 9×5-inch loaf pan with parchment paper, leaving a 2-inch overhang on the long sides. If you don’t have parchment, grease the pan thoroughly with butter or non-stick spray.
  2. In a large mixing bowl, mash the three ripe bananas with a potato masher or fork until mostly smooth with a few small lumps remaining.
  3. Add the melted butter and granulated sugar to the mashed bananas. Stir until well combined. The mixture may look grainy.
  4. Add the eggs and vanilla extract. Stir until the eggs are fully incorporated and the batter looks smooth and glossy. Scrape the bottom and sides of the bowl.
  5. Sprinkle the flour, baking soda, and salt evenly over the wet mixture. Stir gently with a folding motion until just combined. A few streaks of flour are okay. If using mix-ins, fold them in now.
  6. Pour the batter into the prepared loaf pan and spread evenly. Tap the pan gently on the counter a couple of times to release air bubbles.
  7. Bake for 50-60 minutes, until a toothpick inserted into the center comes out clean or with a few moist crumbs. If the top browns too quickly, tent loosely with aluminum foil.
  8. Cool in the pan for 10 minutes, then use the parchment overhang to lift the bread out and transfer to a cooling rack to cool completely.
  9. Slice and serve. For clean slices, use a serrated knife and a gentle sawing motion.

Notes

For best flavor, bake a day ahead and store wrapped at room temperature. Warm slices before serving. To test baking soda freshness, drop a teaspoon into vinegar; it should fizz vigorously. Use a kitchen scale for accurate flour measurement (180g).
