This incredibly moist and tender banana walnut bread requires no mixer and comes together in one bowl. It’s the perfect quick and easy bake for using up overripe bananas, with a foolproof technique that delivers delicious results every time.

  • 3 large ripe bananas, mashed
  • 3/4 cup (150g) granulated sugar
  • 1/3 cup (80ml) vegetable oil
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1.5 cups (180g) all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup (60g) chopped walnuts

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line with parchment paper, leaving an overhang on two sides.
  2. In a large mixing bowl, mash the bananas with a fork until mostly smooth with a few small lumps.
  3. Add sugar, vegetable oil, egg, and vanilla extract to the mashed bananas. Stir until well combined and smooth.
  4. Add flour, baking soda, salt, and cinnamon to the bowl. Stir gently with a folding motion just until the flour disappears. Do not over-mix.
  5. Fold in the chopped walnuts with a few strokes until evenly distributed.
  6. Pour batter into the prepared loaf pan and spread into an even layer.
  7. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  8. Cool in the pan on a wire rack for 10 minutes, then lift out using the parchment paper handles and cool completely on the rack before slicing.

Notes

Use very ripe bananas with brown spots for best sweetness and flavor. Toasting the walnuts before adding enhances their flavor. Do not over-mix the batter to avoid tough bread. For a gluten-free version, use a 1:1 gluten-free baking flour blend. For a vegan version, replace the egg with a flax egg and use plant-based oil.
