  • ⅓ cup unsalted butter, melted (75 grams)
  • ¾ cup granulated sugar (150 grams)
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour (190 grams)
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup semisweet chocolate chips (180 grams)

Instructions

  1. Preheat your oven to 350°F (175°C). Position the rack in the center. Line your loaf pan with a strip of parchment paper, leaving some overhang on the long sides.
  2. In a large mixing bowl, mash the three ripe bananas with a fork until mostly smooth. A few small lumps are fine.
  3. Pour the melted butter over the mashed bananas and stir until combined.
  4. Add the sugar, room-temperature egg, and vanilla extract. Stir vigorously for about 30 seconds until well blended and glossy.
  5. Sprinkle the flour, baking soda, and salt over the wet mixture. Stir gently with a folding motion just until no streaks of flour remain. Do not overmix.
  6. Reserve about 2 tablespoons of chocolate chips for topping. Gently fold the remaining chips into the batter with three or four strokes.
  7. Pour the batter into the prepared pan and spread evenly. Sprinkle the reserved chocolate chips on top.
  8. Bake for 50 to 60 minutes, until a toothpick inserted into the center comes out clean or with a few moist crumbs. The top should be golden brown and cracked.
  9. Cool in the pan for 10 minutes on a wire rack. Then use the parchment handles to lift the bread out and transfer to the rack to cool completely. Wait at least 30 minutes before slicing.

Notes

Use very ripe bananas for best sweetness and moisture. Measure flour correctly by spooning and leveling. Do not overmix the batter. Let the bread cool properly before slicing to avoid crumbling. If the top browns too quickly, tent with foil for the last 15 minutes.
