These Easy Peach Cobbler Bars are the perfect end-of-summer dessert. With a buttery crust, jammy peach filling, and crumbly topping, they come together in under 45 minutes and are a crowd-pleaser for any Labor Day gathering.

  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1 large egg, lightly beaten

  • 4 cups fresh peaches, peeled and sliced (about 45 medium peaches)
  • 1/4 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg

Instructions

  1. Preheat oven to 375°F (190°C). Line a 9×13 inch baking pan with parchment paper, leaving overhang on the long sides.
  2. Make the crust mixture: In a large bowl, whisk together flour, 1 cup sugar, baking powder, and salt. Add cold, cubed butter. Use a pastry cutter or two forks to cut the butter into the flour until the mixture looks like coarse crumbs with some pea-sized butter pieces remaining (about 2-3 minutes).
  3. Add the wet ingredients: Drizzle the beaten egg and vanilla over the flour mixture. Stir with a fork just until it comes together. The dough will look crumbly and dry. Set aside about 1 cup of this mixture for the topping.
  4. Press the bottom crust: Transfer the remaining dough into the prepared pan. Press it down evenly with your fingers or the bottom of a measuring cup. Bake for 12 minutes, until just starting to turn golden around the edges. Let cool for 5 minutes.
  5. Prepare the peach filling: In a medium bowl, gently toss the sliced peaches with 1/4 cup sugar, cornstarch, lemon juice, cinnamon, and nutmeg. Let sit for 2-3 minutes until juices start to release.
  6. Assemble the bars: Spread the peach mixture evenly over the pre-baked crust. Sprinkle the reserved crumb topping evenly over the peaches. Do not press down.
  7. Bake for 30-35 minutes, until the top is golden brown and the peach filling is bubbly around the edges. Let cool completely in the pan on a wire rack (at least 2 hours).
  8. Once cool, use the parchment paper overhang to lift the whole block out of the pan. Cut into squares with a sharp knife, wiping the blade clean between cuts.

Notes

Don’t overwork the dough; it should be crumbly. Use ripe but firm peaches. Let bars cool completely before cutting to prevent sogginess. For best results, line the pan with parchment paper. Bars taste even better the next day.
