Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine sliced peaches, granulated sugar, lemon juice, and cornstarch. Toss gently to coat evenly and let sit while preparing the topping.
  3. In a separate bowl, mix rolled oats, brown sugar, all-purpose flour, ground cinnamon, and salt. Add cold cubed butter and cut into the mixture using a pastry cutter, fork, or fingers until coarse crumbs form with some pea-sized butter pieces.
  4. Transfer the peach mixture into a 9×9-inch baking dish, spreading evenly.
  5. Sprinkle the oat topping evenly over the peaches without packing it down.
  6. Bake for 35-40 minutes until the peach filling is bubbly and the topping is golden brown and crunchy. Tent with foil if topping browns too fast.
