These no-bake energy bites combine ripe banana, creamy peanut butter, and rolled oats for a chewy, naturally sweet snack that’s perfect for meal prep. Ready in under 15 minutes, they’re a crowd-pleasing, healthy treat.

  • ½ cup (130g) creamy peanut butter (natural preferred)
  • 1 medium ripe banana (about 120g mashed)
  • 2 tablespoons (30ml) honey or maple syrup
  • ¼ cup (45g) chocolate chips (optional)
  • 1 tablespoon (7g) ground flaxseed
  • ½ teaspoon vanilla extract
  • Pinch of salt (optional, if peanut butter is unsalted)

Instructions

  1. Mash the banana: Peel the ripe banana and place it in a large mixing bowl. Use a fork or potato masher to mash until smooth with no large lumps (about 30 seconds).
  2. Add the wet ingredients: Add peanut butter, honey (or maple syrup), and vanilla extract to the mashed banana. Stir with a spatula until well combined and uniform in color (about 1 minute).
  3. Add the dry ingredients: Add rolled oats, ground flaxseed, and a pinch of salt (if using). Stir until evenly distributed and the mixture resembles thick cookie dough (about 1 minute).
  4. Fold in the chocolate chips: Add chocolate chips and fold gently until evenly distributed. Add any other mix-ins (shredded coconut, chopped nuts, dried fruit) at this point.
  5. Chill the mixture: Cover the bowl with plastic wrap or a clean kitchen towel and refrigerate for 15-20 minutes to firm up.
  6. Roll into balls: Line a baking sheet or large plate with parchment paper. Using a small cookie scoop or tablespoon, scoop portions and roll between palms into smooth balls (about 1.5 tablespoons each). Wet hands slightly if mixture sticks. Makes 12-14 balls.
  7. Final chill: Place rolled energy bites on the parchment-lined sheet and refrigerate for at least 30 minutes to set. Serve chilled or at room temperature.

Notes

For best results, use a very ripe banana with brown spots. If the mixture is too sticky to roll, chill it longer or wet your hands slightly. These energy bites keep in the fridge for up to 1 week and freeze for up to 3 months. They taste even better the next day as flavors meld.
