  • 1 can (12 ounces) evaporated milk
  • 3 large eggs, room temperature
  • 3/4 cup granulated sugar
  • 1/4 cup packed light brown sugar
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 box (15.25 ounces) yellow cake mix
  • 1 cup chopped pecans
  • 3/4 cup unsalted butter, melted

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with butter or non-stick spray.
  2. In a large mixing bowl, combine the pumpkin puree, evaporated milk, eggs, granulated sugar, brown sugar, pumpkin pie spice, vanilla extract, and salt. Whisk until smooth and well combined.
  3. Pour the pumpkin mixture into the prepared baking dish and spread evenly.
  4. Sprinkle the dry cake mix evenly over the pumpkin layer, breaking up any clumps with your fingers.
  5. Sprinkle the chopped pecans evenly over the dry cake mix.
  6. Drizzle the melted butter evenly over the entire surface, moving your hand in a back-and-forth motion to cover as much as possible.
  7. Bake for 45-50 minutes, until the top is golden brown and the edges are bubbly. If the top browns too quickly, tent loosely with foil after 35 minutes.
  8. Let the cake cool in the pan on a wire rack for at least 20-30 minutes before serving. For cleaner slices, cool completely or refrigerate for 2 hours.

Notes

For the best texture, use 100% pure pumpkin puree (not pumpkin pie filling). Toast pecans at 350°F for 5-7 minutes before adding for extra flavor. Let the cake cool completely for clean slices. Store covered in the refrigerator for up to 5 days. Freezes well for up to 3 months.
