  • 1 box (14.4 ounces) graham crackers (about 24 full sheets)
  • 1/2 cup milk (for dipping graham crackers)

Instructions

  1. Prepare the berries: Wash and dry the strawberries and blueberries. Hull the strawberries and slice them into even pieces—about 1/4-inch thick. Place them in a medium bowl with the blueberries, lemon juice, and optional sugar. Stir gently and set aside.
  2. Make the cream layer: In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy, about 2 minutes. Add the sugar and vanilla extract, and beat until combined. Scrape down the sides of the bowl.
  3. Whip the cream: In a separate bowl, whip the heavy cream until stiff peaks form, about 3-4 minutes. If using Cool Whip, fold it in directly.
  4. Combine: Gently fold the whipped cream into the cream cheese mixture until no white streaks remain. The texture should be fluffy and spreadable.
  5. Layer the base: Pour the milk into a shallow dish. Quickly dip each graham cracker sheet into the milk—just a quick dunk on both sides, about 2 seconds total. Arrange a single layer of dipped graham crackers in the bottom of a 9×13-inch dish. Break crackers as needed to fill gaps.
  6. Add the first cream layer: Spread half of the cream mixture evenly over the graham crackers, smoothing to the edges.
  7. Add the berry layer: Spoon half of the berry mixture over the cream layer, spreading evenly and pressing gently into the cream.
  8. Repeat the layers: Add another layer of dipped graham crackers, then the remaining cream mixture, and top with the remaining berries arranged in a pattern if desired.
  9. Chill: Cover the dish with plastic wrap or foil and refrigerate for at least 6 hours, but overnight is best.
  10. Serve: Slice into squares and scoop out with a spatula. Garnish with extra berries or mint if desired.
