Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Peel and slice 4-5 medium peaches. Toss them gently with 1 cup brown sugar, 1/4 cup granulated sugar, 1 teaspoon cinnamon, 1 tablespoon flour, and a pinch of salt. Set aside.
  3. In a mixing bowl, whisk together 1 1/2 cups all-purpose flour, 1 tablespoon baking powder, 2 tablespoons sugar, and a pinch of salt.
  4. Cut in 6 tablespoons cold unsalted butter using a pastry cutter or fingers until the mixture resembles coarse crumbs.
  5. Stir in 3/4 cup buttermilk and 1 teaspoon vanilla extract (if using) just until combined. Do not overmix. Let rest for 5 minutes.
  6. Pour the peach mixture into a 10-inch cast-iron skillet, spreading evenly.
  7. Drop spoonfuls of the biscuit dough on top, gently flattening them slightly with the back of a spoon, leaving gaps for steam to escape.
  8. Bake in the preheated oven for 30-35 minutes, or until the biscuit topping is golden brown and cooked through and the peach filling is bubbly. Tent with foil after 20 minutes if biscuits brown too fast.
  9. Let the cobbler rest for 10 minutes before serving to thicken the juices.
