These sticky honey mustard chicken skewers are quick, easy, and perfect for weeknights or backyard cookouts. Juicy chicken thighs are marinated in a sweet and tangy honey mustard glaze, then grilled to perfection for a caramelized, crowd-pleasing dish.

  • 1.5 pounds boneless, skinless chicken thighs (about 68 thighs)
  • 1/3 cup honey
  • 1/4 cup Dijon mustard
  • 2 tablespoons whole grain mustard
  • 2 tablespoons apple cider vinegar
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh parsley or cilantro, chopped (for garnish, optional)
  • Sesame seeds (for garnish, optional)
  • Lemon wedges (for serving, optional)

Instructions

  1. Trim excess fat from chicken thighs and cut into 1.5-inch chunks. Place in a medium bowl.
  2. In a small bowl, whisk together honey, Dijon mustard, whole grain mustard, apple cider vinegar, minced garlic, olive oil, smoked paprika, salt, and pepper until smooth.
  3. Pour about 3/4 of the marinade over the chicken chunks and toss to coat evenly. Reserve the remaining 1/4 for basting. Cover and marinate at room temperature for 15-20 minutes, or refrigerate for up to 2 hours.
  4. If using wooden skewers, soak them in water for at least 30 minutes. Thread 4-5 chicken chunks onto each skewer, leaving space between pieces.
  5. Preheat grill, grill pan, or broiler to medium-high heat. Oil the grates or pan to prevent sticking.
  6. Place skewers on the hot grill. Cook for 4-5 minutes on the first side without moving, until they release easily. Flip and cook for another 4-5 minutes.
  7. During the last 2 minutes of cooking, brush the reserved marinade over the skewers. Cook until the internal temperature reaches 165°F (74°C) and juices run clear.
  8. Remove skewers from the grill and let rest for 2-3 minutes. Garnish with fresh parsley or cilantro, sesame seeds, and serve with lemon wedges if desired.

Notes

For extra sticky glaze, baste during the last 2 minutes of cooking. If using chicken breasts, cut into larger chunks and cook for less time to avoid drying out. Soak wooden skewers for at least 30 minutes to prevent burning. Let chicken come to room temperature before grilling for even cooking.
