Ingredients

  • Flour tortillas (8-inch or 10-inch)
  • Deli turkey slices (about 4-6 ounces)
  • Cheese slices (4-6 slices, such as provolone, cheddar, Swiss, or pepper jack)
  • Spread (about 2-3 tablespoons, such as cream cheese, mayonnaise, ranch dressing, hummus, or avocado mash)
  • Optional add-ins: lettuce leaves, thinly sliced bell peppers, cucumber strips, everything bagel seasoning

Instructions

  1. Prep your tortillas: Lay one tortilla flat on your cutting board. If it feels stiff, microwave it for 10 seconds to make it more pliable.
  2. Spread the base: Using a butter knife or offset spatula, spread 1-2 tablespoons of your chosen spread evenly across the entire surface of the tortilla, leaving about a half-inch border around the edges.
  3. Layer the turkey: Place 2-3 slices of turkey flat on the spread, slightly overlapping if needed. Cover the entire surface evenly.
  4. Add the cheese: Lay 2-3 cheese slices on top of the turkey, again slightly overlapping. If using add-ins, place them in a thin line along one edge.
  5. Roll it up tight: Starting from one edge, roll the tortilla tightly into a log, keeping the filling snug as you go.
  6. Wrap and chill: Wrap the rolled tortilla tightly in plastic wrap or parchment paper. Twist the ends like a candy wrapper. Refrigerate for at least 5-10 minutes (optional but recommended).
  7. Slice into pinwheels: Unwrap the chilled roll and place it on your cutting board. Using a sharp serrated knife, slice crosswise into 1-inch thick rounds using a gentle sawing motion.
  8. Pack and serve: Arrange the pinwheels in a lunchbox or container. If packing for later, secure each pinwheel with a toothpick to prevent unraveling.

Notes

For best results, use room-temperature cream cheese for easy spreading. Chill the rolled tortillas before slicing for cleaner cuts. Avoid overfilling to prevent bulging. These roll-ups taste better after a few hours in the fridge as flavors meld. Store in an airtight container in the refrigerator for up to 3 days. Do not freeze.
