Ingredients

  • Large flour tortillas (8-inch)
  • Deli turkey slices (about 4-6 slices per wrap)
  • Cheese slices (2 per wrap, such as cheddar, provolone, or Swiss)
  • Cream cheese (2 tablespoons per wrap, softened)
  • Optional: lettuce leaves or spinach
  • Optional: mustard or mayonnaise (1 teaspoon per wrap)

Instructions

  1. Soften the cream cheese by letting it sit at room temperature for 10 minutes or microwaving for 5-10 seconds.
  2. Lay one flour tortilla flat on a cutting board. If stiff, warm in microwave for 10 seconds or in a dry skillet for 15 seconds per side.
  3. Spread 2 tablespoons of softened cream cheese evenly over the entire surface of the tortilla, leaving a 1/2-inch border around the edge.
  4. If using, spread about 1 teaspoon of mustard or mayonnaise over the cream cheese.
  5. Place 4-6 slices of deli turkey flat on the tortilla, overlapping slightly.
  6. Lay 2 slices of cheese on top of the turkey. If using lettuce or spinach, place it on top of the cheese in a single layer.
  7. Starting at one edge, roll the tortilla firmly but gently, tucking the filling in as you go to form a tight, even log.
  8. Wrap the rolled tortilla tightly in plastic wrap or parchment paper, twisting the ends like a candy wrapper. Let rest at room temperature for 5 minutes (or refrigerate for 15 minutes).
  9. Unwrap the rested roll and place on a cutting board. Using a serrated knife, slice into 1-inch rounds with a gentle sawing motion. You should get about 6-8 pieces per wrap.
  10. Arrange the roll-ups in a lunchbox or airtight container. If packing the night before, place a paper towel in the container to absorb excess moisture.

Notes

Don’t skip the resting step; it helps the roll-ups hold their shape when sliced. Warm tortillas to prevent cracking. For best flavor, make the night before to let flavors meld.
