These Easy Turkey Pinwheel Roll-Ups are the ultimate solution for busy parents who want to serve something nutritious, delicious, and fun without spending an hour in the kitchen. They are quick, easy, and perfect for lunchboxes.

Ingredients

Scale
  • 4 large flour tortillas (10-inch)
  • 8 oz cream cheese, softened
  • 1/4 cup mayonnaise
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 810 slices deli turkey breast
  • 4 slices provolone or cheddar cheese
  • 1/2 cup shredded lettuce (optional)
  • 1/4 cup finely chopped bell peppers (optional)

Instructions

  1. Make the creamy spread: In a small bowl, combine the softened cream cheese, mayonnaise, garlic powder, onion powder, and black pepper. Stir until smooth and well combined.
  2. Prep your tortillas: Lay one flour tortilla flat on your cutting board. If your tortillas are cold, let them sit at room temperature for 5 minutes.
  3. Spread the filling: Using a rubber spatula, spread about 2 tablespoons of the cream cheese mixture evenly over the entire surface of the tortilla, going all the way to the edges.
  4. Layer the turkey: Place 2-3 slices of deli turkey flat over the cream cheese mixture, overlapping them slightly to cover the entire tortilla.
  5. Add the cheese and veggies: Lay one slice of provolone or cheddar on top of the turkey. If using, sprinkle lettuce and bell peppers evenly over the cheese.
  6. Roll it up tight: Starting at the edge closest to you, roll the tortilla away from you, keeping it as tight as you can without tearing. Use your fingers to tuck the filling in as you go.
  7. Wrap and chill: Once rolled, wrap the tortilla tightly in plastic wrap, twisting the ends like a candy wrapper. Place on a baking sheet or plate and refrigerate for at least 30 minutes.
  8. Slice into pinwheels: After chilling, unwrap the roll and place it on your cutting board. Using a sharp serrated knife, slice the roll into 1-inch thick pieces using a gentle sawing motion.
  9. Arrange and serve: Place the pinwheels on a plate or in a lunchbox, cut side up. They are ready to eat immediately or can be stored for later.

Notes

Chilling is essential for clean slicing. If short on time, freeze wrapped rolls for 15 minutes instead of refrigerating for 30. Use a serrated knife for best results. Do not overstuff the tortillas. For a warm version, toast the rolled tortilla in a pan before slicing.
