  • 2 medium limes (zest and juice)

  • Salt and black pepper to taste
  • 2 tablespoons fresh parsley, chopped
  • ¼ cup grated Parmesan cheese (optional)

Instructions

  1. Prepare the zucchini noodles: Wash zucchinis, trim ends, and spiralize into noodles. Place in a colander, sprinkle with salt, let sit 5 minutes, then pat dry with paper towels.
  2. Season the shrimp: Pat shrimp dry, toss with ½ teaspoon salt, ¼ teaspoon black pepper, and ½ teaspoon lime zest.
  3. Zest and juice the limes: Zest both limes (about 1 tablespoon zest), then juice (about ¼ cup juice).
  4. Sear the shrimp: Heat olive oil in a large skillet over medium-high heat. Add shrimp in a single layer, cook 2 minutes without moving, flip, and cook 1-2 minutes until pink. Transfer to a plate.
  5. Build the sauce: Reduce heat to medium, add butter. Once melted, add minced garlic and red pepper flakes, cook 30 seconds until fragrant.
  6. Add lime juice: Pour in lime juice, scrape up browned bits, simmer 1 minute until slightly reduced.
  7. Cook zucchini noodles: Add noodles to skillet, toss with tongs, cook 2-3 minutes until warmed through and slightly tender.
  8. Combine and finish: Return shrimp to skillet, toss gently. Sprinkle with remaining lime zest and parsley. Add Parmesan if using.
  9. Taste and adjust: Adjust salt, pepper, or red pepper flakes as desired.
  10. Serve immediately: Divide between plates, garnish with extra parsley and lime wedges.
