  • 1 cup (240 ml) boiling water
  • 1/2 cup (120 ml) cold water
  • 1 box (3 oz / 85 g) blueberry or berry blue Jello
  • 1 cup (240 ml) boiling water
  • 1/2 cup (120 ml) cold water
  • 8 oz (225 g) cream cheese, softened
  • 1 cup (240 ml) heavy whipping cream, cold
  • 1/2 cup (60 g) powdered sugar, sifted
  • 1 tsp vanilla extract

Instructions

  1. Prepare the Red Jello Layer: Dissolve the strawberry or cherry Jello powder in 1 cup boiling water. Stir until dissolved. Add 1/2 cup cold water and mix well. Pour about 1/3 cup into each serving cup. Refrigerate for 30-40 minutes until firm but slightly tacky.
  2. Make the Cream Cheese Whip: Beat softened cream cheese until smooth. Whip heavy cream until soft peaks form. Gradually add powdered sugar and vanilla to cream cheese, then fold in whipped cream. Refrigerate until ready to use.
  3. Prepare the Blue Jello Layer: Dissolve blueberry or berry blue Jello powder in 1 cup boiling water. Add 1/2 cup cold water and stir. Let cool to room temperature.
  4. Add the Cream Cheese Whip Layer: Spoon or pipe about 2 tablespoons of cream cheese whip on top of the red Jello layer. Spread gently. Refrigerate for 10 minutes to firm up.
  5. Add the Blue Jello Layer: Carefully pour or spoon about 1/3 cup of cooled blue Jello over the cream cheese whip layer. Refrigerate for at least 2 hours until fully set.
  6. Final Touches: Optionally add a dollop of cream cheese whip or fresh blueberries on top before serving. Keep refrigerated until serving.

Notes

Let each Jello layer set until firm but slightly tacky to ensure layers stick well. Cool the blue Jello before pouring to avoid melting the cream cheese whip. Using a spoon or piping bag for the cream cheese whip helps keep layers neat. You can speed up setting by placing cups in the freezer for 15 minutes but watch carefully to avoid freezing solid. For dairy-free or vegan options, substitute cream cheese with plant-based versions and heavy cream with coconut cream, and use vegan gelatin alternatives.
