  • 10 ounces marshmallows (about 283 grams), regular size
  • 3 tablespoons unsalted butter (about 42 grams), softened
  • 12 to 15 popsicle sticks
  • 1/2 cup red, white, and blue sprinkles (mix of jimmies, nonpareils, and star shapes)
  • About 1 cup red candy melts (optional)
  • About 1 cup blue candy melts (optional)
  • Cooking spray or butter for greasing
  • Pinch of sea salt (optional)

Instructions

  1. Lightly grease a 9×13-inch baking dish with butter or cooking spray and line with parchment paper, leaving overhang for easy removal. (5 minutes)
  2. In a large saucepan over medium-low heat, melt 3 tablespoons butter completely. Add 10 ounces marshmallows and stir constantly until smooth and fully melted. Alternatively, melt in microwave in 30-second intervals, stirring between. (5-7 minutes)
  3. Remove from heat and immediately stir in 6 cups Rice Krispies cereal until every flake is coated. (2 minutes)
  4. Pour mixture into prepared pan and press evenly and firmly with a buttered spatula or wax paper. (5 minutes)
  5. Let cool for about 10 minutes until firm but pliable. Cut into 2×3 inch rectangles and insert popsicle sticks lengthwise halfway through. (10 minutes)
  6. Place pops upright on parchment-lined tray and chill in fridge for 20-30 minutes to firm up. (30 minutes)
  7. If using candy melts, melt red and blue melts in separate bowls. Dip top half of each pop into melts, then immediately sprinkle with red, white, and blue decorations. Place back on parchment to set. If skipping dipping, sprinkle decorations on top while pops are slightly sticky. (15-20 minutes)
  8. Refrigerate decorated pops until candy melts harden completely. (15 minutes)

Notes

Use fresh marshmallows for best melting. Grease spatula, knife, and hands lightly to prevent sticking. Work quickly as marshmallow mixture sets fast. Store pops in airtight container at room temperature for up to 3 days; avoid refrigeration to maintain crunch. Reheat marshmallow mixture slightly to fix broken pops.
