Flavorful Cherry Tomato Confit on Toasted Sourdough with Whipped Ricotta

A gourmet yet easy toast featuring slow-cooked cherry tomato confit paired with creamy whipped ricotta on toasted sourdough. Perfect for brunch or a light dinner with a sophisticated flavor.

  • 2 cups (300g) cherry tomatoes, fresh and ripe
  • 1/4 cup (60ml) extra virgin olive oil
  • 3 garlic cloves, minced
  • 1 teaspoon fresh thyme (optional)
  • Pinch of red pepper flakes (optional)
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 4 slices sourdough bread, thick-cut and day-old
  • 1 cup (250g) ricotta cheese, whole milk
  • 2 tablespoons (30ml) heavy cream
  • 1 teaspoon lemon zest
  • 1 teaspoon honey (optional)

Instructions

  1. In a medium saucepan, combine cherry tomatoes, olive oil, minced garlic, fresh thyme, and red pepper flakes if using. Season with salt and freshly ground black pepper.
  2. Turn heat to low and simmer gently for 25-30 minutes, stirring occasionally with a wooden spoon to prevent sticking and help tomatoes break down. Tomatoes should soften and release juices forming a thick, glossy sauce but not mushy.
  3. Check for doneness when tomatoes are tender and oil is bright and fragrant. Lower heat if oil bubbles too vigorously to avoid burning garlic.
  4. While tomatoes cook, place ricotta in a mixing bowl. Add heavy cream, lemon zest, and honey if using. Whip with electric mixer or whisk until light and fluffy, about 2-3 minutes. Adjust sweetness or lemon zest to taste.
  5. Toast sourdough slices until golden and crisp. If using a grill pan, grill over medium heat for 2-3 minutes per side for char marks.
  6. Spread a generous layer of whipped ricotta on each toasted slice. Spoon warm cherry tomato confit on top, letting some oil drizzle over edges.
  7. Garnish with fresh thyme leaves or flaky sea salt if desired. Serve immediately.

Notes

If ricotta is watery, strain through a fine mesh for 15 minutes before whipping. Taste confit as it cooks and add a pinch of sugar near the end if too tart. Use low heat to avoid burning garlic. Toast sourdough just before assembling to keep crispness. For vegan version, substitute ricotta with whipped silken tofu or cashew cream.
