A quick and easy grilled corn recipe featuring a smoky, sweet, and spicy chipotle honey butter with smoked paprika, perfect for BBQs and gatherings.

  • 4 ears fresh corn on the cob, husks removed
  • 4 tablespoons unsalted butter, softened
  • 1 teaspoon chipotle powder or chipotle chili flakes
  • 2 tablespoons honey
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder (optional)
  • 1/2 teaspoon salt, or to taste
  • 1 tablespoon fresh lime juice
  • 2 tablespoons chopped fresh cilantro, for garnish (optional)

Instructions

  1. Preheat your grill to medium-high heat (about 375°F / 190°C). Let it come to temperature before adding the corn, about 10 minutes.
  2. In a mixing bowl, combine softened butter, honey, chipotle powder, smoked paprika, garlic powder, salt, and fresh lime juice. Mix until smooth and creamy, about 2-3 minutes. Adjust seasoning to taste.
  3. Remove husks and silk from each ear of corn. Pat dry with a kitchen towel.
  4. Using a basting brush or spoon, generously coat each ear with the chipotle honey butter.
  5. Place the corn directly on the grill grates. Cook for 10-12 minutes, turning every 2-3 minutes with tongs to get even grill marks and slight char without burning.
  6. When turning the corn halfway through, brush on another layer of the chipotle honey butter.
  7. Once cooked, transfer the corn to a serving platter and sprinkle with chopped fresh cilantro if desired.

Notes

If the corn chars too quickly, move it to a cooler part of the grill or reduce heat. Use softened butter for better mixing and spreading. Apply a second coat of butter halfway through grilling for moist, flavorful corn. For dairy-free, substitute butter with vegan margarine or coconut oil and honey with maple syrup or agave syrup. If no grill is available, roast corn in a 425°F oven for 20-25 minutes, turning halfway.
