Flavorful Fresh Fig and Brie Flatbread with Honey and Rosemary

A quick and easy flatbread recipe combining sweet fresh figs, creamy brie, fragrant rosemary, and a honey drizzle for a perfect sweet-savory appetizer or light meal.

  • 1 large store-bought or homemade flatbread (about 1012 inches diameter)
  • 68 ripe fresh figs, sliced thickly
  • 6 ounces creamy brie cheese, rind removed and sliced thinly
  • 1 tablespoon fresh rosemary, finely chopped, plus a few sprigs for garnish
  • 2 tablespoons good-quality honey (raw or wildflower preferred)
  • 1 tablespoon extra virgin olive oil
  • Pinch of sea salt
  • Freshly ground black pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Place the flatbread on a parchment-lined baking sheet. Brush the surface lightly with 1 tablespoon of olive oil using a basting brush.
  3. Slice the fresh figs into thick rounds about 1/4 inch thick. Remove the rind from the brie and slice thinly.
  4. Finely chop 1 tablespoon of fresh rosemary leaves and mix with 2 tablespoons of honey in a small bowl.
  5. Arrange the fig slices evenly over the oiled flatbread, leaving a small border around the edges. Layer the brie slices on top of the figs. Sprinkle a pinch of sea salt and freshly ground black pepper over everything.
  6. Bake the flatbread in the preheated oven for 10-12 minutes until the brie melts and bubbles, the flatbread edges turn golden brown, and the figs soften slightly.
  7. Remove the flatbread from the oven and immediately drizzle the honey-rosemary mixture evenly over the top. Garnish with fresh rosemary sprigs.
  8. Slice the flatbread into 6-8 pieces and serve warm. Let it rest for 2 minutes before slicing for cleaner cuts.

Notes

Do not overload toppings to keep the crust crisp. Use ripe figs for best flavor. Brush olive oil on flatbread before baking to prevent sogginess. Chill brie briefly for easier slicing. Watch oven closely to avoid burning. Warm honey if too thick for easier drizzling. Leftovers can be reheated in oven at 350°F for 5-7 minutes to restore crispness.
