  • 1 teaspoon onion powder
  • Salt and freshly ground black pepper, to taste
  • 8 brioche buns, split and lightly toasted
  • Butter, for toasting buns
  • Cheddar cheese slices
  • American cheese slices
  • Leafy romaine lettuce, washed and dried
  • Ripe tomatoes, sliced
  • Crunchy dill pickle slices
  • Red onion rings, thinly sliced
  • Ketchup
  • Yellow mustard
  • Mayonnaise
  • Optional grown-up extras: caramelized onions, crispy bacon strips, grilled mushrooms, avocado slices, spicy chipotle mayo

Instructions

  1. In a large mixing bowl, combine ground beef, Worcestershire sauce, garlic powder, onion powder, salt, and pepper. Mix gently until just combined. Divide into 8 equal portions (about 6 ounces each). Shape into patties about ¾-inch thick with a small indentation in the center.
  2. Preheat grill or grill pan to medium-high heat (about 400°F). If using a pan, add a little oil to prevent sticking.
  3. Place patties on grill or pan, indentation-side up. Cook for about 4 minutes without pressing. Flip and cook another 3-4 minutes for medium doneness. Add cheese slices during the last minute to melt.
  4. While patties cook, spread softened butter on buns and toast on grill or pan until golden and slightly crisp, about 1-2 minutes.
  5. Arrange all toppings on platters or bowls for easy access.
  6. Let everyone assemble their burgers starting with the bun, then patty with melted cheese, toppings, and top bun. Serve immediately.

Notes

Do not overmix the meat to keep patties juicy. Make a thumb indentation in patties to prevent puffing. Add cheese in the last minute of cooking. Toast buns with butter to prevent sogginess. Keep cooked patties warm covered with foil if cooking for a crowd. Patties can be prepared up to 24 hours ahead and refrigerated.
