A fresh and fiery salsa combining the juicy sweetness of ripe peaches with the heat of habanero peppers, balanced by fresh lime juice and cilantro. Perfect for summer gatherings and quick to prepare.

  • 12 habanero peppers, seeded and finely chopped
  • Juice of 2 limes
  • ½ cup fresh cilantro leaves, chopped
  • ¼ cup red onion, finely diced
  • 1 clove garlic, minced
  • 1 teaspoon salt
  • 1 tablespoon olive oil

Instructions

  1. Peel the peaches by blanching them in boiling water for 30 seconds, then plunge into ice water to loosen the skin. Dice into ½-inch cubes.
  2. Wear gloves and remove seeds from 1-2 habanero peppers, then finely chop them.
  3. Finely dice ¼ cup red onion and mince 1 garlic clove.
  4. In a mixing bowl, combine diced peaches, habaneros, onion, garlic, and chopped cilantro. Stir gently to avoid breaking down the peaches.
  5. Add the juice of 2 limes and drizzle 1 tablespoon olive oil over the mixture. Stir to coat evenly.
  6. Sprinkle 1 teaspoon salt and stir gently. Taste and adjust salt or lime juice as needed.
  7. Cover and chill in the refrigerator for 30 minutes to 1 hour to allow flavors to meld. Serve chilled or at room temperature.

Notes

Use gloves when handling habanero peppers to avoid irritation. Adjust the number of habaneros and seeds to control heat level. Letting the salsa rest in the fridge for at least 30 minutes improves flavor melding. Use firm but ripe peaches for best texture. Avoid over-mixing to prevent mushy peaches.
