  • 1/2 cup (120 ml) sour cream
  • 2 tablespoons fresh dill, finely chopped
  • 1 small garlic clove, minced (optional)
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon olive oil
  • Salt and freshly cracked black pepper to taste

Instructions

  1. Prepare the vegetables: Peel cucumbers if desired and slice thinly (about 1/4 inch thick). Chop tomatoes into roughly 1-inch chunks. Thinly slice red onion; soak in cold water for 10 minutes if you want to mellow the sharpness, then drain well. Pat all veggies dry with paper towels if too wet.
  2. Make the dressing: In a small bowl, combine sour cream, chopped fresh dill, minced garlic (optional), lemon juice, and olive oil. Whisk thoroughly until smooth. Season with salt and freshly cracked black pepper to taste, starting with 1/4 teaspoon salt and 1/8 teaspoon pepper and adjusting as needed.
  3. Combine salad: In a medium mixing bowl, gently toss cucumbers, tomatoes, and red onion slices. Pour dressing over the veggies and fold carefully to coat without crushing the vegetables.
  4. Chill and serve: Cover the salad and refrigerate for 15-30 minutes to let flavors meld. Toss gently before serving and adjust seasoning if needed.

Notes

Soak red onion slices in cold water for 10 minutes to mellow sharpness. Salt and drain cucumbers if watery to keep salad crisp. Use fresh dill for best flavor.
